Refined sunflower oil, especially the type high in linoleic acid, is now considered one of the most problematic choices for everyday cooking. Due to its chemical instability, when exposed to heat, light, or air, it produces compounds that promote inflammatory processes in the body. In Croatian households and restaurants, where it is often heated to high temperatures, this oil poses a daily risk.
The story begins in the 1970s and 1980s, when dietary guidelines in the United States began promoting low-fat, high-carbohydrate diets. Saturated fats were then labeled as the main culprits for heart disease, while polyunsaturated oils, including sunflower, soybean, and corn oil, were presented as healthier options. The food industry quickly embraced them because they are cheap to produce and have a long shelf life.
Later research showed that lowering cholesterol with these oils did not significantly reduce the risk of heart disease. Despite this, they have remained a staple in the food chain, often hidden in cookies, chips, and ready-made sauces.
The refining process involves high-temperature extraction, bleaching, and deodorization. Each of these steps removes valuable components from the original seed and makes the oil more susceptible to oxidation. In contrast, cold-pressed oils retain antioxidants that naturally protect fatty acids from degradation. Fresh oil from the mill spoils within days, while refined oil remains edible for months. This stability is not a sign of quality but rather an indicator of high processing levels.
Chronic consumption of such oils burdens the liver and gallbladder, and over time can lead to the accumulation of biliary sludge. This is one reason why surgical removal of the gallbladder is now among the most common abdominal procedures worldwide.
The ratio of omega-6 to omega-3 fatty acids plays a crucial role. Once, these two types of fats were consumed in a one-to-one ratio. Due to refined oils, such as sunflower oil, today's diet has pushed this ratio to as high as twenty-to-one in favor of omega-6. Such an imbalance keeps the body in a state of mild, chronic inflammation, which is linked to numerous modern health issues.
Soybean oil, corn oil, refined canola oil, and cottonseed oil share a similar profile. They are all characterized by a high content of omega-6 fatty acids, heavy industrial processing, and susceptibility to oxidation at high temperatures. These oils are hidden not only in bottles in kitchen cabinets but also in restaurant dishes and packaged products.
Extra virgin olive oil remains one of the best choices thanks to its high content of oleic acid and polyphenols that reduce oxidative stress. However, caution is needed when purchasing. According to a study by the University of California, Davis, a significant portion of olive oil sold under the "extra virgin" label does not meet the required quality standards, whether due to oxidation, poor processing, or blending with cheaper refined oils. Checking the source and choosing smaller, organic producers can significantly improve quality.
For high-temperature cooking, clarified butter from pasture-raised cows is also a good option. It contains butyric acid, which supports gut lining health, and the production process removes lactose and casein. Cold-pressed avocado oil and macadamia oil are also stable options, thanks to their high monounsaturated fat content.
The simplest indicator is the word "refined" on the label, along with names like sunflower, soybean, or corn oil. Another clue is a long shelf life compared to cold-pressed oils. The third and perhaps most important is its place on the ingredient list: if the oil appears among the first three ingredients of a processed product, it is most likely a cheap, highly processed variant. Replacing just one bottle in the kitchen can cumulatively affect digestion, inflammation levels, and long-term heart and liver health.
